My family loves a good ice cream spot. Even better when there’s endless flavors with seasonal and dairy-free options as well! We got the chance to visit Cali Cream Ice Cream when we were visiting Encinitas recently, and it did not disappoint. They churn out all homemade flavors made in small batches at this location as well as in San Diego. Although I do get slightly overwhelmed when there’s so many choices (57?!), but the employees were awesome and let us try several flavors to help make our decisions. I ended up with a cup of Graham Central (graham cracker-flavored ice cream with graham ripple and chocolate covered honeycomb crunch) and Coffee (dairy-free, but still super creamy and delish)! My husband went for a couple super chocolatey options as per usual- Oreo Dough, a chocolate chip cookie dough ice cream with large chunks of Oreo cookies was a huge hit. My son Dylan even got a free kiddie cone for his birthday! Yum! I definitely need to go back ASAP for the S’mores, Praline Pecan, Almond Joy, Coconut Cream Pie, Gooey Fudge Brownie…. You get the idea, let’s just say there’s a lot of flavors on my list to try. And now there’s likely seasonal holiday options as well? Yes please!

I love baking seasonal desserts. This time of year, warmly spiced baked goods packed with pumpkin really just hit the spot, am I right? And yes- I know it’s now December, but fall weather is still upon us here in Cali, so I’m keeping that fall baking spirit alive! Just like my grain-free vanilla cake with pumpkin cream frosting, this tasty treat goes a bit beyond your regular ol’ pumpkin pie, and adds ingredients like cream cheese, chocolate, and coconut to the mix! Let’s just say it takes things to a whole other level ;) These ooey gooey pumpkin dream bars are reminiscent of those decadent seven layer bars everyone loves, but with a festive twist! A buttery graham cracker crust, layered with a rich, cinnamon-spiced pumpkin cheesecake filling, and topped with a generous amount of chocolate chips and toasted coconut? Yes please! Crumbly graham crackers, creamy pumpkin, and melty chocolate are quite the addicting combo, if I do say so myself. 

Pumpkin butter is easy to find in stores these days, but it’s also easy to make if you have an extra can of pumpkin purée lying around. Some toasted nuts would be great in these as well- perhaps crushed up into the crust or sprinkled on top? Pumpkin dream bars are delish served warm or cold, topped with ice cream of course! Ooey Gooey Pumpkin Dream Bars:

Preheat the oven to 350 degrees F. Line a 9x13 inch baking dish with parchment paper and grease with nonstick spray. Pulverize graham crackers in a food processor, or crush in a bag with a rolling pin, until you have a fine crumb mixture. In a large bowl, stir together the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of the baking dish to create a crust, using the back of a measuring cup to flatten if needed.

In the base of a stand mixer fitted with a whisk (or use a handheld mixer), add the cream cheese and beat until creamy. then beat in the pumpkin butter, pumpkin puree, brown sugar, eggs, vanilla, cinnamon, ginger, nutmeg, and salt. Beat on medium speed until creamy and combined and no lumps remain. Pour the mixture on top of the graham crust.

Sprinkle the chocolate chips generously over the top. Bake for about 22-24 minutes, then remove the dish and sprinkle the coconut on top. Bake for another 28-30 minutes, until the coconut is golden, and the center of the bars is still just a bit underdone. If your coconut is toasting too quickly and getting brown, you may cover with foil for the last 10 minutes or so.

Let cool for about 15-20 minutes in the pan, and then use the parchment paper to remove the bars, allowing them to cool completely on a cooling rack before cutting so that they can set. These bake up super well ahead of time, and are equally delicious served warm or cold out of the fridge. Either way, top with ice cream, and extra chocolate chips and coconut. Enjoy!

key lime pie

I'll be the first to admit, I've never been a key lime pie person. There are very few desserts that I don't love, but key lime pie, along with lemon meringue pie and flan, have never been at the top of my list for whatever reason. I would just typically choose something chocolate, caramel, nutty, or spiced over a citrus-based dessert. Not one to hold a bias, I decided to whip one up for a good friend (who happens to love it!) for her birthday! I can safely say after making one myself, that I thoroughly enjoyed this pie. I love a graham cracker crust, and I personally think toasted coconut is a wonderful addition to almost any dessert. It ends up complementing the fresh, tropical flavors in this pie perfectly. Because I was transporting this pie into the city for dinner, I baked it in a disposable pie dish. But it ended up looking so bright and pretty that I really wish I baked it in one of my pretty ceramic pie dishes! Next time ;)

Key Lime Pie:

Crust:

  • 10-12 full graham crackers (or about 1.5 cups crushed graham crackers)

  • 2 tbsp light brown sugar

  • 1/2 cup coconut oil, melted

  • 1/4 tsp sea salt

Filling:

  • 2 tablespoons finely grated lime zest

  • 4 large egg yolks

  • 1 14 oz. can sweetened condensed milk

  • 2/3 cup fresh lime juice (about 12 key limes or 4 regular limes)

Topping:

  • 3/4 cup heavy whipping cream

  • 2 tablespoons powdered sugar

  • 1/3 cup flaked coconut, toasted

  • lime zest

Preheat oven to 350 F. Combine graham crackers, brown sugar, and salt in a food processor, and pulse until combined. Pour in coconut oil, and pulse a few more times until mixture is uniformly crumbly and moist. Press crust mix into the bottom and up the sides of a standard 9-inch pie dish. Bake crust until lightly browned, about 10 minutes. Set on cooling rack while you prepare filling. 

Zest limes into the bottom of a medium bowl until you have 2 tablespoons (reserving a bit for topping). Beat zest and egg yolks in a stand mixer (or use an electric hand-held one) until pale and thick, about 5 minutes. Add sweetened condensed milk and beat until well incorporated, about 3 minutes more. Whisk lime juice into yolk mixture until combined. Pour into graham crust and bake pie for another 10-12 minutes, until center is just set. Let pie cool completely before adding topping.

In a medium bowl of stand mixer, beat cream and sugar until soft peaks are formed. Spread over top of chilled pie. Sprinkle with toasted coconut and extra lime zest. If possbile, chill pie for another 2-3 hours so that topping can fully set. Slice and enjoy! Pie will stay fresh in the fridge for 5-7 days.
